Speaker Q&A: Mark Kendall, Inox Equip & ceda
Our next Q&A features Mark Kendall, director of Inox Equip and chairman of ceda (the show’s lead partner). He’ll be appearing in the ceda-hosted ‘Big questions for kitchen houses’ panel on opening day, giving his take on recent design developments.
Mark will also be discussing ‘Building Better Kitchens in Hospitals’, on the second day alongside representatives from the HCA, NACC, and ISS UK.
What piece of equipment is most essential to your kitchen operation?
The combination oven is by far the most essential piece of equipment in our kitchens. Extremely versatile and widely under used. Ongoing training is essential and key to our choice of manufacturer.
What’s on your equipment wish-list this year?
A connected WiFi solution for the commercial kitchen, embraced by the manufacturers.
What do you feel is the key for operators/caterers to successfully compete against their competitors?
Embracing change and responding to the ever-moving market. Social media is a great tool to collect key data.
What do you see as key trends for commercial kitchens in the coming year?
Space is always a premium in all sectors. Kitchen houses are constantly challenged to produce working ergonomic designs in limited space. The trend for quick and efficient installations is ever growing, particularly in the High Street sector to minimise downtime and to ensure the tills are ringing from day one.

How important is the Commercial Kitchen trade show to you and the sector?
Commercial Kitchen embraces the distributor market and this is evident and underpinned by choosing ceda as a Trade Partner. ceda members will be visiting to support this.
Can you tell us a bit about your much-anticipated sessions at Commercial Kitchen 2018?
The key message for me and ceda is to connect with our customers and Trade Partners. Our industry has a habit of talking to itself and not the wider audience. I hope this session will go some way to changing this perception.
Who or what inspires you to be even better?
My competition — the better they get then the harder we push raising the bar to deliver. With this approach there is only one winner, the Customer!
What’s the best advice you’ve ever been given?
Check it twice then check it again.
Tell us a fun fact about yourself that most people don’t know:
In my spare time I enjoy restoring vintage Lambretta’s and can be seen on our country’s motorways on the Bank Holidays, with my wife as pillion.
